Ingredients:
2/3rd cup sugar
½ cup oil
2 eggs
2/3rd cup mashed bananas (2 small and should be very ripe)
1 teaspoon vanilla extract
1 2/3rd cup all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon powder
Pre-heat oven to 190°C and line your cupcake tray with baking cups. In a bowl, beat sugar, oil and eggs. Stir in the bananas and vanilla extract. Mix in the remaining ingredients until the batter is moistened. Divide the batter evenly into the baking cups. Bake for approximately 21 minutes or until the cupcake bounces back to touch.
Cool before serving. To bring out the rich cinnamon flavour, frost your cupcakes lavishly with honey and cinnamon icing. Make frosting swirls and top with a banana slice for a perfect look.
Salted Caramel Recipe for the Center-Filled Cupcakes
Ingredients:
½ cup heavy cream
6 tablespoons butter (unsalted) (90 grams)
1 cup granulated sugar
1 teaspoon salt (if you are using salted butter use ½ tsp salt instead)
Method
Heat the sugar in a pan at low heat while stirring continuously with a spatula. Once the sugar is completely melted and has a rich brown color, add your butter. The caramel will begin to bubble, continue to stir until the butter is completely mixed in the sugar. Once done, gradually pour in the cream while stirring constantly. Once all the cream is added allow it to boil for a minute before removing it off the stove. Remove from heat and add the salt, mixing it in thoroughly. Allow it to cool before using.
