Chocolate DIY Drawings
Try melting chocolate over a double boiler and drop into a piping bag. Fit a small round nozzle to the bag and working while the chocolate is still warm, pipe your very own drawings onto a piece of wax paper. Wait for the chocolate to set and then peel it off the wax paper and pop on top of your cupcake’s icing.
Ganache Toppings
Ganache isn’t only a deliciously sophisticated topping, but ideal if you’re going to be decorating cupcakes en masse. Ganache can be quickly and easily spooned on top of icing. What’s more, it’s easy to make: bring a quarter cup of milk to simmer and pour it over semi-sweet chocolate chips that are room temperature. Stir until the chocolate is melted and leave to cool for a few minutes. Dip your cupcakes straight into the glossy topping for a smooth finish or spoon it over for a fun effect.
Spun Sugar Toppings
Caramel sugar cages are elegant and definitely offer the “wow” factor for your cupcakes. They’re also fairly easy to create. Whisk together half a cup of water, ¼ teaspoon cream of tartar and 1 cup of sugar in a saucepan and bring to the simmer. While that’s heating up, spray a couple of wooden spoons with non-stick spray and pin them to the counter with a pan. Once the caramel reaches 340 degrees Fahrenheit, remove from heat and leave it to reach a thick corn syrup consistency. Take a spoonful of caramel and drizzle quickly in a back and forth motion over the spoon handles. Use about 5 spoonfuls of caramel across a handle. Cup your hands in a ball and gather the caramel together (as much as you need to top a cupcake) and set aside to cool.
Bubble Wrap Chocolate
This fun cupcake topping is so tasty. Melt a cup of semi-sweet and white chocolate in separate bowls. First spread the white chocolate over the bubbly side of bubble wrap and place in the freezer for a few minutes. Pull it out and spread the semi-sweet chocolate on top of the white chocolate and leave to set. Once the chocolate has set, just peel off the bubble wrap and break the chocolate into chunks. Top your cupcakes with the bubbly pieces for an impressive finish.
